BLUEBERRY & TARRAGON SOUR

10 fresh blueberries
Two stalks of fresh tarragon (just leaves)
40ml gin
20ml blue caracao
30ml lemon
15 ml sugar syrup
30ml aquafaba/1 egg white
Garnish: Tarragon stalk

Place blueberries, tarragon leaves, lemon juice and sugar syrup into your shaker and muddle until all blueberries are broken down. Add your gin, blue caracao and aquafaba and dry shake for 10 seconds. Add in your ice and shake until frosted over and double strain into a chilled coupette glass. Finish with tarragon leaf.
