BOURBON BLOOD ORANGE SOUR

60ml bourbon

15ml lemon juice

20ml blood orange

20ml blood orange & rosemary syrup*

1 egg white

Garnish: Blood orange wedge 7 rosemary sprig

Place all ingredients into a shaker and dry shake hard without ice for 15 seconds. Refill shaker with ice and wet shake for 15 seconds before double strain over ice in rock glass. Finish with garnish on top.

*Blood Orange & Rosemary Syrup

3 blood oranges (peels)

1 cup sugar

1.25 cups water

4 long sprigs rosemary (just leaves)

Place blood orange peels, sugar and water in pan and bring to a high simmer making sure all the sugar has melted. Reduce heat to low simmer and let bubble away for five minutes. Add in your rosemary and let bubble away for 15 or so minutes. Take off heat and let cool before keeping in fridge overnight to steep. Strain the next day.
