FASOLAKIA
Fasolakia is a delightful Greek dish that features green beans and potatoes cooked in a rich tomato sauce with olive oil, onions and garlic. This hearty meal can be enjoyed warm or at room temperature and is typically served as a side dish, but it can easily steal the spotlight as a main course. It captures the essence of Greek comfort food, celebrating fresh ingredients and a love for vibrant flavours.
I grew up eating this by the bucket, thanks to my yiayia would always bring over containers over it. To this day the reason all my containers have a red tinge to them, because of this dish. It’s filling and healthy, and tastes even better the next day as leftovers. You can add in more vegetables if you like, but I like it how it is just with some rice.

FASOLAKIA 〰️
(GREEK BEAN & POTATO RED STEW)
1 brown onion (diced)
5 white potatoes (peeled and cut into medium cubes)
2 tbl sp paprika
2 tbl sp oregano
1 tbl sp cracked black pepper
2 tbl tomato paste
400gm canned diced tomatoes
300-400gm green beans (trimmed)
Salt (to taste)
Cooking oil
Place heavy pot on medium heat with a drizzle of oil. Add onion in and sweat down for a few minutes, don’t burn, add cold water if needed. Add in paprika, oregano, pepper and big pinch of salt with more oil. Allow to sizzle and mix through over a minute. Add tomato paste, mix through and cook out for a minute. Add in the white potatoes and mix through for a minute just to seal them.
Add in canned tomatoes, refill can twice with water and add in (800ml worth) and bring to a high simmer. Once high simmer reached, add in green beans, mix through, season with salt and allow to simmer for 45-50 minutes. Cook until potatoes can be pierced with a fork easily.
Season with salt to taste, and enjoy with bread or rice.
