HARD LEMONADE
45ml whisky
30ml lemon juice
15ml demerara lemon syrup*
Soda water
Garnish: Lemon wedge & mint sprig
Place whisky, lemon juice and syrup into tall glass and fill halfway with ice. Using a straw or bar spoon and stir to bring ingredients together and get cold. Fill the rest of glass with ice and top with soda, finishing with garnishes.
*Demerara Lemon Syrup
1 cup demerara sugar
1 cup water
2 lemons (just peel, remove pith)
Place all ingredients into a pan and bring to a simmer (stirring up to simmer). Then leave on low heat and gently simmer for 10 minutes. Once done, let cool in container in fridge and drain out lemon peels when ready to use.
