PEACH SMASH

60ml dark/spiced rum

22.5ml lemon juice

22.5ml peach syrup*

1/2 peach diced

5-6 mint leaves

Garnish is mint sprigs, dehydrated lemon wheel & peach slice

Place peach slices and syrup in a cocktail shaker and muddle all together really well. Add in your rum, lemon juice and mint leaves into a cocktail shaker and fill with ice. Shake really hard for 15-18 seconds and double strain over ice in a rock glass. Place your garnishes in one spot nice and tight.

*Peach Syrup

2 peaches (diced)

1 cup sugar

1.5 cups water

5 fresh bay leaf

1 lemon (peel)

To make peach syrup place all ingredients into pot and bring to a high simmer, stirring to help dissolve sugar. Once you’ve reach a high simmer, reduce heat to a gentle simmer and let it bubble away for 10-12 minutes, or until you have a loose syrup consistency. Push through a sieve and make sure you extract all the liquid.
