PLUM GIN & TONIC

30ml gin

15ml plum syrup*

Soda water

Fresh plum slices (garnish)

Pour gin and plum syrup into tall glass and add in ice. Stir down liquids in ice until glass frosted over. Fill with more ice and top with soda. Finish with a plum slice fan for garnish and mix together to enjoy.

*PLUM (& STAR ANISE) SYRUP

3 plums diced large (use a couple of different variations)

5 star anise

1 cup caster sugar

1.5 cups cold water

Place all ingredients into a pan and bring to a high simmer, stirring every so often. Once high simmer is reached, let it simmer away for 8-10 minutes or until you have a close to syrup texture (it will thicken and keep cooking off the heat). Strain mixture through sieve and place in fridge for when needed. Remove star anise from strained plums and keep in sealed contained as a plum jam.
