QUICK CHICKEN TACOS

1/4 red cabbage

3 tomatoes

1 small bunch coriander (washed thoroughly)

1/2 white onion

1 lime

1 jalapeno

2 cooked chicken breasts

50gm feta cheese

8 taco wraps

Hot sauce of choice

Start by thinly slicing the red cabbage and pop into a bowl, cover with salt and massage the salt in to help wilt it into an easy slaw.

For the pico de gallo finely dice the white onion, jalapeño and coriander leaves. Dice the tomatoes and add everything into a bowl with the juice of half a lime. Season with salt to taste.

Chop up the chicken, prep extra lime wedges with other lime half, warm the tacos and build the tacos with slaw, chicken, then pico de Gallo, microplaned/crumbled feta cheese and hot sauce to finish.
