STRAWBERRY GIN FIZZ

60ml gin

22.5ml lemon juice

*22.5ml strawberry syrup or 1 heaped tbl sp strawberry jam

1 egg white or 30ml aquafaba (for vegan)

Soda water

Place gin, lemon juice and strawberry syrup in a cocktail shaker and fill with ice. Shake hard for 12-15 seconds and then strain into one half of the shaker. Add in your egg white and shake hard for 15 seconds to make nice and foamy before double straining into a tall chill glass. Top with soda to the top and finish with a dehydrated lemon wheel.

*Strawberry syrup

For syrup I added a punnet of strawberries and eye balled some sugar over the top with a bit of water and let it reduce in a pan over low heat, squishing the strawberry juice out as I went. Alternatively to this you could muddle a handful of strawberries with about 15 ml of simple syrup before adding in the gin and lemon juice.
