WATERMELON & TOMATO SALAD


Watermelon, feta and mint sing together because the fruit’s juicy, candy sweet crunch contrasts beautifully with salty, creamy feta while mint cuts through with a bright, cooling lift. Together they create a perfect balance of sweet, salty, creamy and fresh. Add plump tomatoes and you get a fantastic little twist, their slightly acidic, savoury depth and firmer texture bridge the watermelon and feta, amp up juiciness in a more grown up way and introduce umami notes that make every bite more complex and irresistibly salad worthy.

WATERMELON & TOMATO SALAD 〰️

Time: 20 minutes

Serves: 3-4

1/4 whole watermelon, chopped into cubes

4 heirloom tomatoes, medium chopped

150gm feta cheese

1/3 cup sumac pickled red onion*

Handful fresh mint leaves

Sumac Pickled Red Onion

Dressing

2 tbl sp EVOO

1 tbl sp white wine vinegar

Few crack black pepper

Salt, to taste

Place tomatoes and watermelon in bowl and cover in dressing before mixing thoroughly. Plate up by putting tomato and watermelon mix down first, then a crumbling of feta and finish with the pickled red onion and mint leaves.
